Why water matters

What your water is doing inside your machine right now

Every shot of espresso starts as water. That water passes through your boiler, your group head, and your heat exchanger — all of it. Whatever minerals are in your water stay behind.

Scale is the enemy. Calcium and magnesium deposits build up over time, reducing heating efficiency, restricting flow, and eventually damaging components that are expensive to replace. A heavily scaled boiler doesn't just perform worse — it fails.

But soft water isn't the answer either. Water that's too pure is actually corrosive to certain metals used in espresso machines. Most manufacturers specify a target range — not zero minerals, not too many.
