Getting started right

Why new cafés start here

Most new café buildouts don't fail because of a bad machine. They fail because the machine decision got made before the volume, space, and staffing plan were settled — or after the electrical and plumbing budget was already spent elsewhere.

These three paths cover the range we see most often in new café buildouts: a volumetric platform for consistency with a still-learning staff, a proven workhorse with straightforward maintenance, and a value-focused option that keeps more of your opening budget available for everything else.

We'll help you land on the right one before you order anything. That's the whole point of the consultation.

  • Fit
New cafés still finalizing their buildoutYou know you need a machine but haven't locked in electrical, plumbing, or counter layout yet.
  • Fit
First-time equipment buyersYou've never bought commercial espresso equipment and want a straight answer, not a catalog to sort through alone.
  • Fit
Opening with a small or still-training teamYour baristas are new or being hired, and consistency matters more than manual control right now.

Three proven paths

A practical shortlist for new cafés

Each of these fits a different opening scenario. Tell us your details and we'll confirm which one — or recommend something else entirely.

Volumetric · Compact 2-Group

Nuova Simonelli Appia LIFE Volumetric Compact (2 Group)

Volumetric dosing keeps shots consistent across a full shift, even with staff who are still learning the bar — one less variable to manage in your first few months. Compact footprint fits tighter opening counters.
Proven · Commercial Workhorse

Rancilio Classe 5 USB Commercial Espresso Machine

A long-standing commercial platform with straightforward maintenance and a deep service track record — a safe anchor choice when everything else about opening a café is still being figured out.
Value · Compact 2-Group

Casadio Nettuno A2 Compact (2 Group)

Full commercial output without the highest-tier price point, so more of your opening budget stays available for the rest of the buildout. A practical choice when volume is proven but capital is tight.

Why buy from us

Why new cafés choose Capital City

Opening a café means a lot of vendors making a lot of promises. Here's what ours actually looks like.

We service what we sell

Our in-house technician services the machines we sell. No 1-800 number, no waiting on a technician from out of state.

Installation coordination

We help coordinate installation requirements, including electrical, plumbing, filtration, and site readiness, before your machine arrives.

Training included

We train your staff on the machine and grinder, dialing in shots, steaming milk, and daily cleaning routines.

Honest recommendations

We don't push machines we can't support. If none of these three fit, we'll tell you what will.

Grinder pairing included

We help pair the machine with the right espresso grinder, including separate regular and decaf setups when needed.

We roast the coffee too

Family-owned since 1999. Trusted by 200+ businesses. We think about your whole opening program, not just the equipment sale.

How it works

Our recommendation process

Four steps from first conversation to a machine running behind your bar.

1

Tell us about your café

Location, timeline, expected volume, budget. We ask the questions that actually matter.

2

We compare your options

We look across all five brands we carry and confirm which path fits your opening.

3

You get an honest recommendation

One or two options with honest notes on each — what fits, what doesn't, what it costs to own.

4

We handle the rest

Purchase, installation coordination, training, and ongoing service. We're here after opening day.

Common questions

Before you open

Which machine is right for my new café?
It depends on your expected volume, staff experience, space, and budget. The three machines on this page cover the most common new-café scenarios, but the right answer for you depends on specifics we haven't seen yet. Tell us about your buildout and we'll confirm or point you elsewhere.
Do you install machines?
We help coordinate installation requirements, including electrical, plumbing, filtration, and site readiness. For customers in our local service area, this includes hands-on installation support. We'll confirm exactly what's included for your location on your consultation call.
Do you service what you sell?
Yes. We have an in-house technician who services the machines we sell. That's part of why we're careful about which brands we carry and which machines we recommend, we need to be able to support what we sell.
Do I need a grinder too?
Yes, in almost every case. A machine is only as good as the grinder feeding it. We help pair the right grinder to your volume and menu, including separate regular and decaf setups when needed, as part of your recommendation.
Do you help new cafés that have never bought commercial equipment before?
Yes, this is most of what we do. We'll help you choose the machine and grinder, plan for voltage and plumbing before build-out is finalized, and get you set up with coffee and service from day one.
Is financing available?
Financing may be available depending on the machine and buyer profile. We can discuss options after we understand the equipment fit.
Should I browse machines first or request a recommendation?
Either works. If you already have a model in mind, browse our full catalog. If you'd rather not guess, request a recommendation and we'll point you to the right fit based on your specific buildout, no pressure either way.
